Sweet Chutney(Dipping)

Ingredients

4 tbsp. Tamarind paste
8-10 dates (khajoor)
50 grams jaggery
½ salt

Instructions

Take dates in a bowl, add water until dates immerse in it. Also dissolve jaggery in a small amount of water, keep it for 1 hr.
After 1hr, grind the dates, dissolved jaggery, tamarind paste and salt in a blender.
Grind it till chutney turns smooth.

Sweet chutney is ready for all type of chaats…

 Green Chutney(Dipping)

Ingredients

2 cups Cilantro or coriander leaves
1 cup Mint leaves
2 tbsp. lime juice or tamarind juice
1 tsp. cumin powder
3 green chilies
½ tsp. salt

Instructions

Clean the mint and cilantro leaves.
Grind mint, Cilantro leaves, green chilies, salt, cumin powder, lemon juice in a blender, grind till chutney turns smooth. Add little water if necessary.
Green chutney is ready for all type of chaats.

Khara biscuit (Spicy cookie)

                 
                   

 Khara biscuit (Spicy cookie)

Ingredients

1 ½ cup all purpose flour (Maida)
½-unsalted butter
 3 green chilies finely chopped,
1 tbsp. chopped curry leaves
1 tbsp. chopped cilantro or coriander leaves
1 tsp. Wheat cream (rava)
¼ tsp. red chill powder
¼ tsp. pepper powder
¼ tsp. roasted cumin powder
¼ tsp. carom seeds (ajwain) 
¾ tsp. salt
1 tsp. sugar
1 tsp. baking powder
2 tbsp. yogurt or curd





Instructions

Take a mixing bowl; mix well all ingredients except butter and yogurt.
Then add butter and again mix until it forms crumbly dough.
Now add 1 tbsp. of yogurt, mix using hands and makes this dough stiff (if required add another 1 tbsp. of yogurt).
Preheat the oven at 350 degree F    
Make dough into two parts, take one part and roll it into sheet about 5mm thickness.
Using cookie cutter cut the cookies into any desired shape.
Repeat the same steps for another part of dough.
Then place the cookies on cookie tray, which is covered with parchment paper.
When done place the baking tray in the preheated oven.
Let it bake about 20mins at 350 degrees F.
After 20mins, bring oven temperature to 200 degrees F.
Bake another 10mins, so that Khara biscuit cooks well inside also.
After 10-12mins, turn off the oven but do not take out the tray yet, let it be in oven for another 20-25mins.
Take out the tray after 20mins or so and let it cool for about 10mins.
Khara biscuit or spicy cookies is ready……..

                           

               Almond Cookie(NaanKhatai)

Ingredients:

½ cup all purpose flour (Maida)
½ cup Wheat flour (Chapatti flour)
1 Tbsp. Wheat cream (Semolina / sooji/rava)
½ cup unsalted butter (Room temperature)
1 Tbsp. Crushed almond or your choice of nut
½ cup sugar
½ tsp. Cardamom powder
1 tsp. Baking powde



Instructions:

Take  a mixing bowl, mix all dry ingredients.
In another mixing bowl, beat sugar and room temperature butter well.
Now Add dry mixture to the beaten sugar and butter mixture.
Mix everything well and foam like dough.
Preheat oven at 350 degrees F
Make small golf size balls and place the balls about half inches a part on an ungreased cookie-baking tray.
When done place the baking tray into the preheated oven.
Let it bake about 15mins at 350 degrees F.
After 10mins, bring oven temperature to 170 degrees F.
Bake another about 10-12mins so that naan khatai cooks well inside also.
After 10-12mins, turn off the oven but do not take out the tray yet. let it be in oven for another 20-25mins.
Take out tray after 20mins or so and let it cool for about 10mins.
Naan Khatai is ready………
